Drunken Poached Pears

Makes 4 pears
  • 4 Anjou pears, peeled⁠
  • 3 cups semi-sweet red wine⁠
  • 3 cups water⁠
  • 1 cup Raven’s Nest Mulling Spices⁠
  • ¼ cup brown sugar⁠
  • 2 Star Anise pods⁠
  • 1 Cinnamon Stick⁠ 
  1. Combine all ingredients except pears in a medium sauce pot. Heat liquid on the stovetop to just below a simmer, between 170-180 degrees. ⁠
  2. Once the liquid comes to temperature, add pears. The pears will be halfway covered with liquid. Turn the pears after 15 minutes, let cook for additional 15-20 minutes. Test pears with a tooth pick to ensure they are soft in the center. ⁠
  3. Once the pears are soft, remove them from the poaching liquid and serve warm.⁠
